Preparation Steps

  1. Trim the ends of the squash and slice it into rounds. Place in a saucepan, cover with water, add a pinch of salt, and bring to a boil until the squash is tender.
  2. Drain the cooked squash thoroughly using a colander, shaking to remove any excess water.
  3. Melt the butter in a sauté pan over medium heat. Add the sliced onion and Poblano pepper, cooking until they emit a fragrant aroma.
  4. In a large bowl, whisk together the mayonnaise and eggs until smooth.
  5. Incorporate the shredded cheese, sautéed onions, and peppers into the mayonnaise mixture.
  6. Gently fold in the boiled squash and season with black pepper.
  7. Transfer the entire mixture into the casserole dish.
